Lavender cheesecake with white chocolate

250 g favorite biscuits
100 g butter


500 g curd
70 g cane sugar
100 ml whipping cream
3 egg yolks
3 teaspoons lavender (dried or fresh)
vanilla sugar
vanilla essence
Carla white chocolate


Preheat the oven to 180 ° C and prepare the corpus. Crush the biscuits in a blender or roller and mix the biscuit crumb with melted butter in a bowl. Put the mixture into the prepared mold. We first line the bottom of the round mold with baking paper (a mold with a diameter of  20 cm was used in this recipe). Put the corpus in the oven for 20 minutes to strengthen it.
Meanwhile, mix the cheesecake mixture. In a bowl, mix cottage cheese, egg yolks, sugar, vanilla sugar and add a few drops of vanilla essence, cream and lavender. Mix everything and pour it onto the partially cooled corpus. Place a baking pan with water on the bottom of the oven and lower the temperature to 140-150 ° C. Bake for about an hour until the edges of the cheesecake are firm. At that moment, we have the cheesecake ready. After cooling, decorate with melted white chocolate.
