One of the most reliable methods is to melt the chocolate in a water bath. This technique is a bit slower, but it melts the chocolate into a creamy form without the risk of burning.
Fill the pot about one-third full with water and let the water heat up until it starts to boil slightly. The water should not be boiling, as too high a temperature could burn the chocolate. We place the bowl of chocolate on the pot so that it does not touch the water and let the chocolate melt slowly, stirring it occasionally so that it melts evenly.
Simple preparation procedure:
- Fill the pot with water and place a durable bowl on it so that it does not reach the water.
- Bring the water to a boil and then reduce to a gentler flame.
- Break the chocolate into smaller pieces in a bowl.
- Melt the chocolate slowly and gradually.
- Stir the chocolate so that it melts evenly.
- After a while, we have soft, shiny and liquid chocolate.
- Then add fat (butter, coconut oil, cocoa butter,...) only as needed or according to the recipe
TIP
Remember to be patient with the water bath. Chocolate that melts slowly has a better consistency and taste than chocolate that melts too quickly.
