Chilli con Carne with chocolate

Ingredients

3 spoons oil
1 onion
1 red bell pepper (thinly sliced)
2 cloves garlic cloves (finely chopped)
1 teaspoon chili peppers (minced)
1 teaspoon sweet bell peppers (minced)
1/2 teaspoon cinnamon (ground)
salt
freshly ground pepper
1/2 teaspoon cumin (minced)
500 g ground beef (lean)
300 ml beef stock
400 g diced tomatoes (peeled, canned)
1/2 lžičky marjoram (dried)
1 teaspoon cane sugar
2 spoons tomato puree
2-3 cubec Carla 70% dark chocolate
400 g red beans (canned)

Procedure

Heat the oil in a saucepan and fry the onion until translucent. Then add the paprika, garlic, chilli, fresh chilli, sweet paprika, cinnamon and cumin, fry for three minutes and then add the ground beef.

Fry for another 8 minutes, stirring occasionally, all the meat should be nicely browned at the end. Then add the rinsed beans to the meat, stir several times and pour the beef broth into the saucepan with the meat and vegetable mixture.

When using fresh beans, it is necessary to soak them in advance and carefully drain the water from them before adding them to the meat. Fresh beans are boiled/simmered together with the meat. It is good to use two types of beans, the dish is then more varied - for example, a combination of white and black or red beans. If we use canned beans, they are added to the dish later, i.e. after about 20 minutes, together with the chocolate, so that they do not boil over.

Add the canned tomatoes, marjoram and sugar, season with salt and pepper. Add the tomato puree and stir. Then reduce the heat to just a simmer, cover with a lid and cook for 20 minutes. Check occasionally – stir, and if the mixture sticks to the bottom of the saucepan, you can add a little more water.

Add the chocolate and beans, stir and simmer for another 10 minutes. Then taste and season with chilli if necessary. Mix well, cover again with a lid and let rest for 10 minutes.

A typical side dish for chilli con carne is rice and also corn tortillas.
