Real chocolate or compound coating? Differences and use in production

When it comes to glazing desserts, making pralines or coating baked goods, one of the most common questions asked in both commercial kitchens and homes is: Should I use real chocolate or compound coating? Visually, they may appear similar, but in terms of composition, taste and processing, they are two completely different products. Both options have their place in food production and confectionery. Let’s take a look at what the main differences are and which option to choose.

Real chocolate: The queen of flavour and uncompromising quality

If you are looking for a premium taste and the highest quality, real chocolate is the obvious choice. Its definition is strictly determined by its composition. The basic and essential ingredients are cocoa mass and high-quality cocoa butter.

EU rules allow chocolate to contain up to 5 % of certain vegetable fats other than cocoa butter. Carla chocolate contains none: its only fats are cocoa butter and, in milk chocolate, milk fat. Thanks to pure cocoa butter, chocolate has its typical delicious flavour, beautiful sheen and characteristic ‘crunch’ when broken.

Working with real chocolate is slightly more demanding – to achieve a perfect, glossy surface that does not melt in the hand, the chocolate must be tempered (a process of controlled heating and cooling). In professional production, it is most commonly used in the form of chocolate chips, which are easy to measure out and melt evenly.

Compound coating: Practical, effective and stable

On the other hand, there is compound coating (often simply called ‘coating’). The main difference from real chocolate lies in the fat used and the type of cocoa ingredient.

You won’t find any cocoa mass in the coating. The cocoa flavour here comes from cocoa powder. The key difference, however, lies in the fat – expensive cocoa butter is replaced here by a larger quantity of other vegetable fats (which do not come from cocoa beans).

Why is compound coating produced and used so widely? The main reason is its exceptional workability. Thanks to the absence of cocoa butter and the use of specific fats, the coating does not need to be tempered. Simply melt it and you can pour it straight away. It is absolutely ideal for high-volume operations, bakeries and patisseries that need to coat hundreds of pastries or choux pastries quickly and with consistent results. Furthermore, the coating often withstands temperature fluctuations better and is more cost-effective for manufacturers.

So what should you choose?

  • Chocolate chips (real chocolate): Choose these if you’re making luxury pralines, premium desserts (e.g. ganache) or simply want the ultimate chocolate experience. Be prepared, however, to temper the chocolate for a perfect coating.
  • Compound coating: Go for this if you need to coat standard pastries, biscuits or cakes quickly and efficiently in large quantities. It will reward you with easy preparation without tempering and a great finish.

Whichever option you choose, at the Carla chocolate factory in Dvůr Králové we have a solution for you, guaranteed to be of consistent Czech quality.
